Cornflake Chicken

If you think cereal is only for breakfast think again! Here’s an awesome recipe for Cornflake Chicken Breast.

1. Season about a cup of flour with salt, pepper, garlic, or whatever your favorite seasoning you have on hand is.

2. Dredge 1 lb. thinly sliced chicken breasts in flour, then dip in egg wash (2 eggs beaten with splash of water or milk), and coat in 2 cups slightly crushed Kellogg’s cornflakes.  Add  more cornflakes as you need them.

Tip: By slightly crushing the cornflakes, you make sure all the chicken gets coated evenly.

3. Cover bottom of skillet with olive oil and brown on medium heat until cornflakes are crispy.

Tip Numero Dos: You can also bake the chicken if you want a healthier alternative.

Homemade Honey Mustard sauce:

Whisk honey and mustard together until you get a dark yellow color (about 3 tablespoons of each ingredient). I just add until it tastes good. If you like it a little sweeter, add more honey. If you like it a little more tangy, add more mustard. This homemade recipe is way better than the store bought stuff.  This also makes a great salad dressing by adding a couple tablespoons of olive oil, salt, and pepper.
